The Breed

One of Only Four True Wagyu Breeds

Akaushi, meaning "red cattle" in Japanese, is one of just four breeds in the world classified as true Wagyu. Originally raised in the volcanic regions of Kumamoto, Japan, these cattle produce a richly marbled, buttery beef with a flavor profile unlike anything else. Our herd is purebred Akaushi, never crossbred, raised free-range for a full three years on premium feed in the Texas Hill Country. The result is beef with extraordinary tenderness, deep flavor, and a marbling score that speaks for itself.

Akaushi translates to "red cattle" in Japanese. The name tells you everything.

Roughly 250+ lbs of finished beef including ribeyes, strip steaks, tenderloins, roasts, short ribs, brisket, and ground. You choose how every cut is portioned. Want thick-cut ribeyes?
